The electronic tongue is an analytical instrument that measures and compares tastes. Like human receptors, each sensor has a spectrum of reactions different from the other. Most of the detection thresholds of the sensors are similar to or better than those of human receptors.

The electronic tongue gave a first proof indicating the unique molecular structure of DouxMatok’s sugar coated mineral particles that provide a perception of enhanced sweetness at the human tongue.
